Cherry Ripe Bars

These are a staple in my household as they are so quick and simple to make, and just as delicious as the traditional Cadbury bar! The perfect alternative to satisfy your sweet tooth!

22 pieces, KJ: 355/piece, P:2.5, C:5.5, f:5.5

Ingredients:

3/4 cup frozen pitted cherries thawed

1/2 cup rolled oats

1/2 cup LSA mix

40g vanilla protein powder

3/4 cup shredded coconut

200g dark chocolate

Method:

  1. Allow the cherries to thaw for at least 1/2 an hour or place in the microwave for 20 seconds

  2. Place the cherries in a food processor along with the oats, LSA mix, protein powder and shredded coconut.

  3. Blend until the mixture combines and sticks together in a thick dough

  4. Line a baking tin with baking paper and empty the mix into the tin

  5. Press the mixture down hard and evenly

  6. Place in the freezer until solid, at least 2 hours

  7. Once the base is solid, heat a pot over low-medium heat

  8. Melt the dark chocolate slowly until smooth

  9. Cut the base into even bars

  10. Empty the chocolate into a bowl and using two forks dip each bar to coat with chocolate

  11. Place the bars onto a lined baking tray

  12. Once all bars are coated, keep chilled in the fridge
