Low Carb Protein Zoats

My favourite Winter brekkie that is so warming and comforting! A fantastic way to get in your veggies with chocolatey goodness!

KJ: 931, P: 22, C:21, F:9 (w/o toppings)

Ingredients:

100g zucchini

20g quick oats

40g egg whites

100ml almond milk

1/4 tsp baking powder

20g protein powder

1/2 cup of water

Method:

  1. Grate the zucchini and press with paper towel to absorb the moisture

  2. Add the zucchini, oats, egg whites, almond milk, baking powder and half the water (save 1/4 cup) into a pot over the stove pot

  3. Simmer on medium heat

  4. Consistently stir and once the mixture starts boiling and thickening (approximately 2 minutes) add the rest of the water and stir

  5. Once the water has absorbed, turn the heat to low and add protein powder, and mix well

  6. Once it is at desired thickness, transfer to a bowl and top with peanut butter, strawberries and any toppings you like!
