Choc-Banana Protein Granola

Greek yoghurt topped with fruit and granola makes for the perfect Summer brekkie or snack! The thing I love most about Granola is it is so versatile! You can really add any nuts, seeds, grains or fruits you like, down to whatever you have left in the cupboard!

Serving size:80g, KJ:1,428/serve, p:19, C:30, f:24

Ingredients:

1 ripe banana

1/3 cup maple syrup

2 & 1/2 tbsp chia seeds

1 & 1/2 cup rolled oats

1/2 cup bukinis

4-5 tbsp chocolate protein powder

1/3 cup of each mixed nut/seed: roasted almonds, walnuts, pecans, hazelnuts, pepitas, sunflower seeds, hemp seeds

Method:

  1. Preheat oven to fan-forced 160 degrees

  2. Mash the banana and combine with maple syrup and chia seeds in a small bowl

  3. In a large mixing bowl combine the rolled oats buckinis, nuts, seeds and protein powder

  4. Add the wet mixture to the dry ingredients and stir well to combine! You may have to get your hands involved to make sure everything is coated evenly!

  5. On a lined baking tray, spread out the mixture evenly, pressing down so it sticks together!

  6. Bake in the oven for 20 minutes until lightly toasted!

  7. Once cooled to touch, pull apart into chunks!
