Choc-Banana Protein Pancakes

Sunday morning never looked so good!

Makes 4 pancakes, KJ:1,625, p:28.6, c:40.7, f:14

Ingredients

Pancakes:

1 banana (100g)

1/4 cup rolled oats

1 egg

30g chocolate protein powder

1/4 tsp baking powder

1/4 cup of almond milk

Chocolate Sauce:(KJ:840, P:6, c:19.5, F:10)

1 tbsp peanut butter or tahini

1 tbsp maple syrup

1 tsp cacao powder

Dash of hot water

Method:

  1. Place all ingredients into a blender/food processor

  2. Blend until smooth

  3. Heat a large frying pan on medium heat and spray with non-stick oil (I like to use coconut)

  4. Pour batter onto pan, should be enough for four large pancakes

  5. Cook on one side until bubbly on top (approx. 5 minutes)

  6. Flip and cook for a further 3-4 minutes or until browned on the other side.

  7. For the topping, combine the nut butter, maple syrup and cacao powder to form a thick paste.

  8. Gradually add the hot water in droplets and mix until smooth. Add as much water as needed till desired consistency is reached.

  9. Plate up your pancakes and add the chocolate sauce and fruit on top as desired
