Healthier Hedgehog Slice

Everyone has a classic bakery go-to and this is one of those treats I always eye off and that my Grandma used to make all the time! Only this version is full of healthy fats and protein!

28 pieces, Kj: 400/piece, p:2.5, c:4, F:7

Ingredients

Base:

1/2 cup cacao powder

1/4 cup hulled tahini

3 tbsp maple syrup

1 tbsp coconut oil

1/4 cup almond milk

2 tbsp cacao powder

1/2 cup shredded coconut

1/2 cup walnuts chopped

1/2 cup roasted almonds chopped

30g chocolate protein powder

Topping:

100g dark chocolate

50g hulled tahini

Method:

  1. Combine 1/2 cup cacao powder with the coconut oil, maple syrup, tahini and almond milk. Mix until a smooth syrup

  2. Place all dry ingredients into a bowl and add the chocolate syrup to the bowl. Stir hard to combine

  3. In a lined baking dish, spread the mix evenly and press down hard

  4. Place in the fridge to set

  5. Heat a pot on low. Melt the dark chocolate and add the tahini. Mix till smooth

  6. Add the chocolate topping to the top of the base and sprinkle with coconut

  7. Refrigerate to set, (or if you’re impatient like me,) put in the freezer for half an hour to set!
