Happy Valentine’s Day

Here’s a super simple and delicious recipe for you and your loved one. One way I always practice self love and self care is through nourishing my body, and so this recipe is refined sugar free, and packed full of protein and healthy fats.

This recipe also features Teff Flakes ( a Gluten Free grain) which is a part of the February GoodnessMe Box. It is incredibly versatile and is a great source of protein and fibre. And of course, this recipe includes the 180Nutrition vanilla protein which is a staple in my diet. If you don’t yet have the 180Nutrition protein, you can use any protein powder in its place.

Ingredients:

  • 60g vanilla protein powder

  • 1/2 cup Teff Flakes

  • 1 tsp baking powder

  • 1/4 cup greek yoghurt

  • 1 egg yolk

  • 1 tsp vanilla essence

  • 1/2 cup dark chocolate chips (or blocked chopped up)

Method:

  1. Preheat oven to fan forced 180 degrees.

  2. Combine vanilla protein, Teff flakes and baking powder in a bowl.

  3. In a seperate bowl add greek yoghurt, egg yolk and vanilla essence. Whisk to combine.

  4. Once smooth, add the wet ingredients to the dry and combine till thick, sticky dough is formed.

  5. Add the chocolate chips to the mix

  6. Grease a skillet (or small frying pan) with butter or coconut oil

  7. Pour mixture into skillet and spread around evenly

  8. Bake in the oven for 15-20 minutes, until the top appears golden brown and crispy.

  9. Allow to cool for 5 minutes

  10. Top with any toppings you like from ice-cream to chocolate chips (or both)

  11. Enjoy lovers
