Breakfast Bowl With Honey Dressing
For those who struggle to get their veggies in, give this nourishing bowl of deliciousness a go! While the total cooking time when making this from scratch can be a bit of a wait, elements of this can also be prepared in advance to make is faster to put together on the go. Just cook 1 or 2 extra sweet potatoes and store in the fridge, ready to be put on top of your Breakfast Bowls.
Serves: 1
Ingredients:
1 egg
1/2 medium Sweet Potato
1 tsp Cinnamon
Salt and pepper
3 stalks of kale
1/2 cup of spinach
Toppings: Avocado, walnuts, pepitas, feta
Dressing:
1 tsp Olive oil
1 tsp Honey
1/2 tsp Balsamic Vinegar
Method:
Pre-heat oven to 220 degrees fan forced
Cut up sweet potato into cubes and place into lined baking dish
Coat with 1 tsp of olive oil, sprinkle of cinnamon, season with salt and pepper. Toss to coat evenly.
Bake for 30-35 minutes
Once the sweet potato is near completion, bring a pot of water to the boil.
Add an egg to the water and boil. (8 mins for hard boil, 5 mins for soft boil.)
Chop up the kale and add to a frying pan over medium heat. Coat with 1 tsp of olive oil.
Once softened, add the spinach to the pan and cook till wilted.
Serve kale and spinach in a bowl, top with the roasted sweet potato, feta, avocado, pepitas, and walnuts
Once egg has cooked, peel shell and add to the bowl
Season with salt and pepper if desired.
To prepare dressing, combine all ingredients in a seperate bowl till smooth
Top with dressing as desired and enjoy!
