Healthy/Paleo KFC Chicken

Serves:4, KJ:1,680/piece, P:25, C:2, f:32

Ingredients:

1/2 cup almond meal

1/2 cup flaked almonds

1 tsp paprika

1 tsp tumeric

1 egg

Dash of almond milk

4 chicken thigh fillets

Method:

  1. Preheat the oven to fan forced 180 degrees celcius

  2. Combine the almond meal, flaked almonds, paprika and tumeric in a bowl

  3. Whisk the egg and almond milk together in a seperate bowl

  4. Trim the fat off the thigh fillets

  5. Dip the chicken fillet into the egg and almond milk then coat in the crumbing mixture

  6. Place each fillet onto a tray lined with baking paper

  7. Bake for 25-30 minutes turning once after 15 minutes
