Healthy/Paleo KFC Chicken
Serves:4, KJ:1,680/piece, P:25, C:2, f:32
Ingredients:
1/2 cup almond meal
1/2 cup flaked almonds
1 tsp paprika
1 tsp tumeric
1 egg
Dash of almond milk
4 chicken thigh fillets
Method:
Preheat the oven to fan forced 180 degrees celcius
Combine the almond meal, flaked almonds, paprika and tumeric in a bowl
Whisk the egg and almond milk together in a seperate bowl
Trim the fat off the thigh fillets
Dip the chicken fillet into the egg and almond milk then coat in the crumbing mixture
Place each fillet onto a tray lined with baking paper
Bake for 25-30 minutes turning once after 15 minutes
